Abstract
Food and nutritional education play an important role in the growth stage of infants, a good diet allows the infant to have a lower risk of contracting diseases. For this reason, this research project aims to support food and nutritional education through didactic activities for children from 4 to 5 years of parallel 2A of the CIS "Rita Chavez de Muñoz" Cuenca - Ecuador. It systematizes the theoretical foundations of the categories of studies and observes the food and nutrition in the children of the parallel already mentioned. The main theoretical references develop different study topics for research and make a series of theories and approaches for the approach of food and nutrition and food and nutritional education. Within the research, in its methodological section we worked with the sociocritical paradigm, the qualitative approach, type of descriptive study, method of Action Research, procedures of action research, analysis unit, selection criteria and exclusion of individuals, categories and their indicators, the techniques to carry out the diagnosis was developed according to the Action Research, which is the participant observation and the semi-structured interview, instruments for data collection were used the following: field diaries, observation guide, interview guide. Information collection, instrument validation procedure, information analysis procedure and timeline.
